Our company bottles and sells exclusively, Extra virgin olive oil of the “Manaki ” variety.
At harvest time, we collect the olives daily, with our own vehicles, which gives us the ability to control the quality of the olives to be converted to oil under strict criteria.
We employ a chemical-laboratory, using the latest technology, for the testing of our olive oil, in order to ensure the highest quality in our products.

MILL-STORAGE-, PACKAGING AND MARKETING OF OLIVE OIL
1. Receiving the olives and the weigh-in.
The olives reach the oil mill in farmer’s baskets and wicker tubs. The Olives are ground on the same day so as to preserve the highest quality of the fresh oil. (Other mills that leave the olives sitting a few days before pressing, experience issues with the quality when the less-fresh olives begin to spoil).
2. Start-up operation and Removal of stray leaves
The olives pour from the baskets into funnel, then land onto a conveyor belt that lifts them higher and up to the water wash and the leaf separators. ( It is important to remove as many leaves as possible, otherwise if crushed with the olives the leaves will affect the quality).
3. Pulping and crushing the cleaned olives into a mash.
Olives are pulped and crushed into a liquid mash. In our modern mill, this process requires 20 minutes.
4. Stirring and smoothing
The mash enters a new stirring vat, which smoothens the mash for 40 more minutes until it has become creamy. This process takes more time so as to keep the creamy olive mash below 25 C, otherwise it cannot be called ‘cold-pressed’.
5. Two Centrifugal Separators
The creamy mash enters the first separator, and solids are removed, the second separator removes any water, leaving pure extra virgin olive oil.
6. Storage
The fresh oil runs down a funnel into stainless steel storage tanks, where it stays until packaging.
